Title: Peanut butter oatmeal cookies

If you need a snack now and then these cookies do the trick and they also help with constipation.

I cut the recipe down to 12 cookies. 

1 cup old fashioned oats
1/3 cup all purpose flour
1/3 teaspoon baking soda
dash of salt
1/3 teaspoon ground cinnamon
1/3 cup unsalted butter at room temperature
1/3 cup creamy peanut butter
1/3 cup granulated sugar
1/3 cup light brown sugar
1 small egg
3/4 teaspoon vanilla extract

Instructions
1. Preheat the oven to 350 deg F.  Line baking sheet with parchment paper and set aside
2. In a medium bowl, whisk together the oats, flour, baking soda, salt, and cinnamon and set aside
3. Using a mixer, beat the butter, peanut butter, and sugars together until creamy, this will take about 2 minutes. Beat in the gg and vanilla extract. Mix until well combined .(I did it by hand using a wooden spoon) Less to clean up.
4 On low, add in the dry ingredients and mix until just until combined.
5. I like to chill the batter in the refrigerator for easier handling
Scoop the cookies into round balls and place on prepared baking sheets, leaving 2 inches between cookies.  Keep your eye on them but bake for 10-12 minutes or until the cookies are lightly browned around the edges, but still soft in the middle
6. Remove cookies from oven and let cool on the baking sheet for about 5 minutes.  Transfer to a wire rack and cool completely.
